Slow-roasted tomato and goats cheese bruschetta
This is a very versatile starter and any rustic bread is suitable to use. Try a thickly sliced baguette or loaf of Asda Green Olive Bread

Ingredients
  • 125ml Asda Extra Virgin Olive Oil
  • 6 small vine-ripened tomatoes or Asda Extra Special Sweet Plum Tomatoes
  • 1 ciabatta loaf
  • 1 bulb garlic
  • 150g Asda Extra Special Poitou-charentes Goats Cheese, sliced
  • Few sprigs fresh thyme, broken up into small pieces
Method
1 Preheat the oven to 150C/ 130C Fan/Gas 2. Lightly grease a baking tray with olive oil. Halve the tomatoes, cutting them through where the stem was. Put on the baking tray, cut side up, and brush with a little olive oil. Season well and roast in the oven for 1 hour until the tomatoes are cooked – they will be shrunken and soft.

2 Cut the bread into slices, 2cm thick. Cut the garlic bulb through the middle and dip it in oil. Rub the cut side on both sides of the bread to coat it lightly, re-dipping the garlic in oil for each slice.

3 Preheat the grill and lightly toast the bread. Then top each slice with 2 tomato halves and some of the sliced goats cheese. Grill until the cheese is glazed.

4 Scatter on a little thyme and serve immediately, drizzled with olive oil.
