Hot mackerel
Barbecued fish with salsa
Serves 4
Ready in 12 minutes
Ingredients
  • 4 mackerel, heads & tails removed
  • For the salsa:
  • 4 large tomatoes
  • 4 spring onions
  • 2 garlic cloves
  • 2 tbsp olive oil
  • Juice of ½ lime
  • Handful of fresh, chopped coriander
  • 12 chopped black olives (optional)
  • 2 tbsp capers (optional)
Method
1 For a basic salsa, chop 4 large tomatoes, 4 spring onions and 2 garlic cloves. Mix with 2 tbsp olive oil, juice of ½ lime and a handful of fresh, chopped coriander. For an Italian twist add 12 chopped black olives and 2 tbsp capers.

2 Using a sharp, non-serrated knife, make 2 or 3 slashes in the skin of the mackerel on both sides. Place on a medium-hot barbecue for about 10 minutes, until cooked through. Serve with salsa and salad.
