Succulent chicken pieces with a nice and spicy kick

Ingredients
- 6 spring onions, trimmed and finely chopped
- 2-3 garlic cloves, finely chopped
- 1 red chilli, deseeded and finely chopped
- 3tbsp light brown soft sugar
- Juice ½ lime
- 3tbsp jerk seasoning
- 1tbsp all-purpose seasoning
- 3tbsp white or dark rum
- 3tbsp olive oil
- 4 chicken breast fillets
Method
1 In a non-metallic container, mix the spring onions with the garlic, chilli, sugar, lime juice, jerk and all-purpose seasoning, rum and the olive oil.
2 Make 2 or 3 slashes in each chicken breast with a sharp knife. Add to the marinade, coat and leave in the fridge for at least 1 hour.
3 Cook the chicken over a medium-hot barbecue, turning once or twice and basting with any leftover marinade, for about 10-15 minutes, until cooked through. Serve with corn on the cob and peppers that have been finished off on the barbecue for a charred look.
