Strawberry shortcakes
A heavenly combination that looks impressive
Serves 6
Ready in 1 hour, 30 minutes
Ingredients
  • 115g butter
  • 50g caster sugar
  • 175g plain flour, sifted
  • 250g pot Asda mascarpone
  • 2tsp clear honey
  • 2tbsp milk
  • Few drops natural vanilla extract
  • 400g strawberries, hulled
  • 1tbsp icing sugar, plus extra for dusting
Method
1 Preheat the oven to 180C/Gas 4. Cover two baking trays with non-stick baking paper.

2 Beat the butter and caster sugar until creamy. Add the flour and gather together using your fingertips to make a dough.

3 Put on a sheet of baking paper and roll out under a piece of cling film to the thickness of a pound coin. Cut out as many rounds as you can using a 7cm cutter.

4 Bake for 10 minutes, then leave on the tin to cool for 10 minutes. Remove and finish cooling on a wire rack.

5 Mix the mascarpone with the honey, milk and vanilla. Halve 3 strawberries and set aside. Whizz half of the remaining berries in a blender with the icing sugar to make a coulis.

6 Slice the rest of the berries and divide between six biscuits, with most of the mascarpone. Top with the other biscuits. Dust with icing sugar and decorate with mascarpone and half a strawberry. Serve with the coulis.
