A great way of getting the kids to eat more fish

Ingredients
- 2 spring onions, trimmed
- 350g skinless smoked haddock fillet, roughly chopped
- 250g skinless white fish fillet, roughly chopped
- 1 medium egg, beaten
- 2tbsp flour
- 3tbsp sunflower or olive oil
- Crusty white bread toast
- Asda salsa and salad, to serve
Method
1 Place the spring onions in a food processor or blender and whizz until finely chopped. Add the fish and season and whizz until coarsely minced. Add the egg and whizz again until combined.
2 Divide the mixture into 8 and, with wet hands, shape into small patties. Coat in flour. Heat the oil in a non-stick frying pan and cook the burgers for 8-10 minutes until golden, turning over once.
3 Serve immediately on warm toasted crusty bread, with a serving of salsa and garnished with salad leaves.
