Fish burgers
A great way of getting the kids to eat more fish
Serves 4
Ready in 20 minutes
Ingredients
  • 2 spring onions, trimmed
  • 350g skinless smoked haddock fillet, roughly chopped
  • 250g skinless white fish fillet, roughly chopped
  • 1 medium egg, beaten
  • 2tbsp flour
  • 3tbsp sunflower or olive oil
  • Crusty white bread toast
  • Asda salsa and salad, to serve
Method
1 Place the spring onions in a food processor or blender and whizz until finely chopped. Add the fish and season and whizz until coarsely minced. Add the egg and whizz again until combined.

2 Divide the mixture into 8 and, with wet hands, shape into small patties. Coat in flour. Heat the oil in a non-stick frying pan and cook the burgers for 8-10 minutes until golden, turning over once.

3 Serve immediately on warm toasted crusty bread, with a serving of salsa and garnished with salad leaves.
