Mediterranean vegetable slice
Suitable for vegetarians
Cold slices of this are great on a picnic, but it’s just as good hot
Serves 8
Ready in 40 minutes
Ingredients
  • 2tbsp olive oil
  • 1 red onion, thinly sliced
  • 1 yellow pepper, deseeded and sliced
  • 1 courgette, cut into 1cm slices
  • 500g chilled puff pastry
  • Flour, for rolling out
  • 265g jar Asda Pizza Topper
  • 125g pack Asda mozzarella, drained and sliced
  • 1 medium egg, lightly beaten
Method
1 Preheat the oven to 220C/Gas 7. Heat the oil in a frying pan and fry the onion, pepper and courgette until the onion is soft and golden and the pepper and courgette tender. Leave to cool.

2 Lightly dust a work surface with flour. Cut the pastry into two pieces, one slightly larger than the other. Roll the smaller piece out to make one 25cm x 30cm rectangle, and the larger one to make a 28cm x 33cm rectangle.

3 Put the smaller piece on a baking tray and spread with the pizza topper, leaving a 3cm gap around the edges. Put the veg on top, then the mozzarella.

4 Fold the large piece in half lengthways and make cuts along the fold, about 2cm apart, from the middle to within 3cm of each edge. Brush the edge of the bottom piece with egg. Unfold the larger piece and place on top. Press the edges together. Brush with egg. Bake for about 20 minutes until golden brown.
