This light, summery recipe is ideal for a main course

Ingredients
- 2 Asda chicken breast fillets
- 100g Asda Full Fat Soft and Creamy Cheese
- 2 sun-dried tomatoes in oil, drained and finely chopped
- Leaves from 1 sprig of thyme
- 1tsp finely grated lemon zest
- 60g Asda Extra Special Parma ham
Method
1 Preheat the oven to 190C/Gas 5. Put the chicken breasts between 2 sheets of cling film and gently bash with a rolling pin until doubled in size.
2 Mix together the cheese, sun-dried tomatoes, thyme and lemon zest. Season well with salt and freshly ground black pepper.
3 Divide the filling between the chicken and roll up to enclose. Wrap the breasts in the Parma ham and then in a loose parcel of foil. Put on a baking tray and cook for 30 minutes, peeling back the foil for the last five minutes. Leave until cold and then thickly slice.
