Baked haddock
A fish dish with lots of vitamin-rich vegetables
Serves 4
Ready in 30 minutes
Ingredients
  • 25g butter
  • 1tbsp oil
  • 4 spring onions, sliced
  • 1 yellow pepper, deseeded and diced
  • 3 large vine-ripened tomatoes, deseeded and diced
  • 600g haddock fillet
  • 75g fresh breadcrumbs
  • Potato wedges, to serve
Method
1 Preheat the oven to 200C/Gas 6. Heat half the butter and oil in a pan and cook the spring onions and pepper over a low heat for 5 minutes. Add the tomatoes and cook for another 5 minutes. Season well.

2 While the vegetables are cooking, grease a shallow ovenproof dish which is just large enough to hold the fish fillets in a single layer. Put the haddock in the dish, skin side down and spread the vegetables on top.

3 Melt the rest of the butter and mix with the breadcrumbs. Sprinkle over the fish and bake for 15 to 20 minutes.
