Polenta with tomato sauce
Suitable for vegetarians
A tasty vegetarian treat
Serves 4
Ready in 25 minutes
Ingredients
  • 500g pack ready-made polenta
  • 2tbsp oil
  • 100g Asda grated mature Cheddar cheese
  • 1 medium red onion, chopped
  • 1 clove garlic, chopped
  • 400g can Asda chopped tomatoes with herbs
  • 6 green olives, roughly chopped
  • 1tbsp capers, optional
  • Salad, to serve
Method
1 Preheat the oven to 200C/Gas 6. Grease an ovenproof dish. Cut the polenta into 8 slices and put in the dish. Brush with a little more oil and sprinkle on the cheese. Bake for 15 to 20 minutes.

2 Meanwhile, heat the rest of the oil in a pan and cook the onion until soft. Add the garlic and cook for another minute.

3 Add the tomatoes and season. Simmer, uncovered, for 5 to 10 minutes. Add the olives and capers (if using) and serve with the polenta and salad on the side.
