Herbs and lemon enhance the flavour of the trout

Ingredients
- 4tbsp flour
- 4 Asda trout fillets
- 2tbsp sunflower oil
- 40g butter
- Juice of 1 lemon
- 2tbsp chopped flat leaf parsley
- New potatoes, fresh peas and lemon wedges, to serve
Method
1 Put the flour on a plate and season well. Dip both sides of the fish in the flour, shaking lightly to remove any excess.
2 Heat the oil in a large frying pan and fry the fish over a medium heat for about 3 minutes on each side. You may need to do this in two batches if your pan isn’t big enough.
3 Keep the fish warm on serving plates. Add the butter to the pan and heat until melted and on the point of browning - watch carefully. Immediately remove from the heat and add the lemon juice and parsley. Pour over the fish and serve with new potatoes, fresh peas and lemon wedges.
