Suitable for vegetarians
The variety of ingredients in this salad makes it both colourful and nutritious

Ingredients
- 2 large eggs, hard boiled
- 2 x 180g packs fine beans
- 4tbsp olive oil
- 2tbsp balsamic vinegar
- 1tsp Asda Dijon mustard
- 290g can Asda borlotti beans, drained
- 1 small red onion, finely chopped
- 220g pack baby plum tomatoes, halved
- 200g pack Asda feta cheese, crumbled
Method
1 Shell the eggs and quarter them. Set aside. Add the fine beans to a pan of boiling water and simmer for 5 minutes. Drain. While they are cooking, whisk the oil, vinegar and mustard together in a large bowl. Season well.
2 Add the fine beans, borlotti beans, onion and tomatoes and toss lightly. Stir in most of the feta and divide between 4 bowls.
3 Top each serving with two quarters of the egg and scatter the rest of the feta between the bowls. Serve immediately.
