A Cajun meal, full of southern spicy flavour

Ingredients
- 2tbsp sunflower oil
- 1 onion, chopped
- 1 stick celery, chopped
- 1 red pepper, deseeded and roughly chopped
- 1 green pepper, deseeded and roughly chopped
- 400g can chopped tomatoes
- 2tsp fresh thyme, chopped
- 2tsp Tabasco sauce
- 2 x 250g packs Asda peeled prawns
- Rice, to serve
Method
1 Heat the oil in a medium-sized saucepan, add the onion and cook over a low heat until soft. Add the celery and peppers and cook for a further 10 minutes.
2 Add the tomatoes and thyme and simmer, uncovered, for 3 minutes until some of the liquid has evaporated and the sauce has thickened slightly.
3 Stir in the Tabasco sauce and prawns and heat through. Do not allow to boil, or the prawns will become tough and shrink. Serve with rice.
