Super cheese and tomato potatoes
Suitable for vegetarians
Dress up a simple spud with this tasty filling
Serves 8
Ready in 1 hour, 50 minutes
Ingredients
  • 8 baking potatoes
  • 50g butter, plus extra for greasing
  • 350g Asda mature Cheddar cheese, grated
  • 1 bunch spring onions, trimmed and finely sliced
  • 250g cherry tomatoes, quartered

Method
1 Preheat the oven to 200C/180C Fan/Gas 6. Prick the potatoes all over with a fork and rub the skins with a little butter. Cook in the oven for about 1 hour 20 minutes, until they are tender.

2 Mix the cheese with the spring onions and tomatoes.

3 When the potatoes are cooked, cut them in half and scoop out the flesh into a bowl. Mash with the butter and then stir in the cheese mixture. Pile back into the potato skins. Return to the oven for 10 minutes until the cheese is melted and golden.
