This healthy, filling salad is perfect for a simple lunchtime snack

Ingredients
- 300g Asda cherry tomatoes
- 5tbsp olive oil
- 6 rashers Asda Extra Special Applewood Smoked Back Bacon
- 180g bag Asda baby spinach
- 1 large ripe avocado, peeled and sliced
- 2tbsp white wine vinegar
- 1tbsp Asda wholegrain mustard
- 2tsp runny honey
- Crusty white bread, to serve
Method
1 Preheat oven to 200C/Gas 6. Place the tomatoes on a non-stick baking tray and drizzle with 1tbsp olive oil. Place the bacon on a non-stick baking sheet. Cook both in the oven for 10 minutes until the tomato skins split and the bacon turns golden.
2 Put the spinach and avocado in a serving bowl. In a separate bowl, put the remaining oil, vinegar, mustard and honey, and mix together.
3 Cut the bacon rashers into large pieces and add them to the serving bowl along with the roasted tomatoes. Drizzle over the vinegar dressing. Toss gently before serving, then serve with some crusty white bread.
