Bacon and mushroom stir-fry
A quick and easy dinner that’s ready in only 20 minutes
Serves 4
Ready in 20 minutes
Ingredients
  • 2tbsp sunflower oil
  • 6 rashers Asda Wildfire Honey Back Bacon, trimmed and chopped (large pieces)
  • 4 Asda Jumbo mushrooms, thickly sliced
  • 2 garlic cloves, crushed
  • 1in piece root ginger, peeled and grated
  • 1 bunch spring onions, trimmed and cut into 1in pieces
  • 8 baby plum tomatoes, halved
  • 2tbsp soy sauce
  • Rice or noodles, to serve
Method
1 Heat the oil in a large pan or wok. Add the bacon and stir-fry for 4 minutes, then add the mushrooms and stir-fry for a further 5 minutes until the bacon and mushrooms turn golden.

2 Add the garlic, ginger and spring onions, and cook for another 2 minutes.

3 Add the tomatoes, and season. Stir-fry for 3-4 minutes until soft, add the soy sauce. Serve with rice or noodles.
