Toad in the hole
The sun-dried tomatoes and herbs give a modern twist to this old favourite
Serves 4
Ready in 40 minutes
Ingredients
  • 2tbsp sunflower oil
  • 454g pack Asda Butcher’s Best Lincolnshire Sausages
  • 115g plain flour
  • 2 large eggs
  • 300ml semi-skimmed milk
  • 6 sun-dried tomatoes in oil, drained and finely chopped
  • 2tbsp fresh thyme leaves

Method
1 Preheat the oven to 230C/Gas 8. Put the oil and sausages in a roasting tin and cook for 10 minutes. Meanwhile, sift the flour into a bowl with a pinch of salt, and add the eggs. Add a little milk and beat until smooth, gradually adding the rest of the milk. Add the tomatoes and thyme.

2 Pour the batter over the sausages and return to the oven for another 20-25 minutes.
