Ingredients
- 1tbsp sunflower oil
- 1 small red onion
- 1 red pepper, deseeded and diced
- 2 x 200g cans Asda sweetcorn kernels, drained
- 2 x 290g cans Asda chilli beans
- 1 pack Asda flour tortillas
- 75g mature Cheddar cheese, grated
- Iceberg lettuce, shredded
- 8tbsp natural Greek-style yogurt
Method
1 Heat the oil in a pan and cook the onion and red pepper for 5 minutes. Add the sweetcorn and chilli beans and heat through.
2 Warm the flour tortillas as instructed on the pack and put a spoonful of the vegetables in the middle of each.
3 Top with some grated cheese and lettuce. Fold up to make little parcels with the joins underneath and top with a spoonful of yogurt.
