Ingredients
- 300g Asda spaghetti
- 2tbsp Asda mild and light olive oil
- 1 small onion, chopped
- 2 garlic cloves, finely chopped
- 250ml dry white wine
- grated zest of 1⁄2 lemon
- 142ml carton Asda double cream
- 200g Asda ready-to-eat cooked and shelled mussels
- 2tbsp chopped Asda fresh parsley
- 1tbsp snipped Asda fresh chives
- Pinch of salt
- Freshly ground black pepper
Method
1 Put the pasta on to cook in a large pan of lightly salted boiling water for 10 minutes until al dente (so that it still has a little give when you bite into it).
2 Meanwhile, heat the oil in a large pan, add the onion and cook for 5 minutes until softened but not browned. Add the garlic and cook for another minute.
3 Pour in the wine, bring to the boil and allow to bubble for 3 to 4 minutes. Add the lemon zest.
4 Stir in the cream and heat through. Add the mussels, parsley and chives to the sauce and season to taste. Remove from heat so the mussels don’t overcook and toughen.
5 Drain the pasta, toss with the sauce and serve immediately. If you want a spicier taste, grind over more pepper.
