Ingredients
- 20 Asda large cooked green-lipped mussels in half shells (thoroughly thawed if frozen)
- 50g butter, softened
- 1 garlic clove, crushed
- 1tbsp chopped Asda fresh chives
- 1tbsp chopped Asda fresh parsley
- Freshly ground black pepper
- 25g fresh white breadcrumbs
- 25g freshly grated Parmesan
Method
1 Gently loosen the mussels from the shells so they will be easier to eat, then arrange them snugly in a single layer in a shallow heatproof dish.
2 Mix together the butter, garlic, chopped chives and parsley with a little black pepper to season. Then mix together the breadcrumbs and Parmesan. Preheat grill to a moderate temperature.
3 Place a small knob of the herb butter on each of the mussels and then place them under the grill briefly until the butter is melted.
4 Immediately sprinkle with the Parmesan breadcrumbs (about 1 heaped teaspoon on each mussel) and pop back under the grill for 1 to 2 minutes until golden. Serve garnished with lemon wedges.
