Ingredients
- 75g Asda Smart Price butter
- ¼ Asda Smart Price lemon, squeezed
- 3tbsp fresh Asda curly leaf parsley, chopped
- 4 Asda Smart Price gammon steaks
- Asda Smart Price vegetable oil
- 4 Asda Smart Price eggs
Method
1 Beat the butter until soft, then beat in the lemon juice. Stir in the parsley and season well with pepper. Put on a piece of clingfilm and shape into a roll, about 3cm diameter. Wrap with clingfilm and chill for 30 minutes.
2 Make snips in the gammon rind at 2cm intervals – this helps to prevent the steak curling up during cooking. Brush both sides of each steak lightly with oil. Heat a griddle pan or large frying pan until very hot and cook the steaks in batches for about 3 minutes on each side, or until cooked through. (You should be able to fit 2 steaks in without them overlapping.) Keep the gammon warm while you cook the rest.
3 Meanwhile, fill another frying pan two thirds full with cold water, add a pinch of salt and heat until simmering. Break an egg into a cup. Swirl the water with a spoon to make a whirlpool and immediately slip the egg into the centre. Turn the heat to very low and poach the egg for 2 minutes. Remove carefully with a slotted spoon. Cook the rest of the eggs in the same way and serve on the gammon, topped with parsley butter.
