Oriental mussels with shallots
Serves 4
Preparation time 20 minutes
Ingredients
  • 2tbsp Asda mild and light olive oil
  • 2 shallots, finely chopped
  • 1 garlic clove, finely chopped
  • Small piece of fresh root ginger, peeled and finely chopped
  • 1 red chilli, deseeded and finely chopped
  • 300ml dry white wine or dry cider
  • 1kg Asda fresh live mussels (ready scrubbed and cleaned)
  • 1tsp Asda cornflour
  • 3tbsp chopped Asda fresh coriander
  • Crusty bread to serve
Method
1 Heat the oil in a large pan. Add the shallots and cook for 3 to 4 minutes until soft. Stir in the garlic, ginger and chilli and cook for a few minutes.

2 Pour in the wine or cider and bring to the boil.

3 Add the mussels, cover and cook over a high heat for 3 to 4 minutes, shaking the pan occasionally, until the mussel shells open. Be sure to discard any that remain closed.

4 Strain mussels into a large serving bowl, reserving the juices. Blend cornflour with 2 teaspoons cold water, blend with the reserved juices then pour back into the pan. Return to the heat and cook, stirring, until lightly thickened. Toss in the coriander then pour over the mussels and serve immediately with crusty bread.
