Banana tatin

Ingredients
- 75g Asda Smart Price butter
- 2tbsp granulated sugar
- 300g puff pastry, thawed (if frozen)
- 5 or 6 Asda Smart Price bananas, just ripe
- Juice of ½ Asda Smart Price lemon
- Cream, to serve
Method
1 Smear the butter over the base of a thick-based, 20cm diameter ovenproof frying pan (not with a plastic or wooden handle) and sprinkle on the sugar. Refrigerate for 20 minutes. Roll out the pastry to a rough circle, about 30cm wide. Wrap in clingfilm and chill.
2 Preheat the oven to 220C/Gas 7. Peel the bananas and cut into 6cm-7cm pieces. Put upright in the ovenproof pan, fitting them closely together. Squeeze lemon juice over.
3 Put the pan on the hob, over a medium heat, for 8 to 10 minutes, until the sugar caramelises. Remove and cool for 10 minutes.
4 Drape the pastry over the bananas and tuck into the pan. Neatly trim off any overlap and make two cuts in the top to allow the steam to escape. Bake for 15 minutes. Invert onto a serving plate, cut into wedges and serve with a dollop of fresh cream, if you like.
5 If you don’t have an ovenproof frying pan, heat the butter and sugar in a small saucepan, over a low heat, until the mixture turns light brown. Pour into a 20cm cake tin (not one with a loose base) and arrange bananas in it. Squeeze lemon juice over, cover with the pastry and bake as above.
