Ingredients
- 2tbsp light soy sauce
- 1tbsp Asda cider vinegar
- 2tsp cornflour
- 1tsp golden caster sugar
- 150ml hot vegetable stock
- 1tbsp high fruit orange marmalade
- 1tbsp Asda tomato ketchup
- 1tbsp Asda stir-fry oil
- 1 red pepper, deseeded and cut into long strips
- 2 carrots, peeled and cut into thick matchsticks
- 75g baby corn, halved lengthways
- 100g mange tout
- 150g beansprouts
- 4 spring onions, trimmed and sliced diagonally
- Toasted sesame seeds, to garnish
Method
1 Blend together the soy sauce, vinegar and cornflour until smooth. Stir in the sugar, stock, marmalade and tomato ketchup, and set the sauce aside.
2 Heat the stir-fry oil in a nonstick wok or large frying pan. Add the red pepper, carrots and baby corn and stir-fry for 2 minutes, then add the mange tout and stir-fry for another 2 minutes.
3 Add the beansprouts and spring onions to the wok and stir-fry for another minute.
4 Pour in the prepared sauce and cook, stirring, until the sauce thickens. Serve the vegetables immediately, sprinkled with toasted sesame seeds.
