Ingredients
- 8 small Asda leeks, trimmed, rinsed, dried and cut into 4cm pieces
- 3tbsp lemon juice
- 75ml Asda olive oil
- 115ml dry white wine
- 1 shallot, finely chopped
- 1 small stick Asda celery, finely chopped
- sprig of Asda fresh thyme or a pinch of Asda dried thyme
- 1 bay leaf
- 3 sprigs Asda flat-leaf parsley
- 8 Asda coriander seeds, lightly crushed
- celery leaves and Asda flat-leaf parsley, to garnish
Method
1 Boil a pan of water, add the leeks and simmer for 5 minutes. Drain and rinse under cold running water. Drain again.
2 Meanwhile, put the lemon juice, oil, wine, shallot, celery, thyme, bay leaf, parsley and coriander seeds in a pan. Add 250ml water, bring to the boil, cover and simmer for 8 minutes.
3 Add the leeks, cover and simmer for 10 minutes. Remove the leeks with a draining spoon and put in a serving dish.
4 Boil the liquid, uncovered, for 5 minutes to reduce it. Pour over the leeks, then remove the bay leaf and sprig of thyme. Leave to cool.
5 Serve the salad cold, garnished with celery leaves and parsley.
