Ingredients
- 1 small red onion, chopped
- 1tbsp Asda sunflower oil
- 200g Asda British trimmed rhubarb, cut into 2cm long pieces
- 6tbsp Asda thick cut orange marmalade
- pinch of dried chilli flakes
- 1 cinnamon stick
- 2 x 2-packs Asda Norfolk duck breast fillets
Method
1 Cook the onion in the oil until soft. Rinse the rhubarb under cold running water. Add to the pan with 200ml cold water, cover and simmer for 10 minutes.
2 Stir in the marmalade, chilli flakes and cinnamon stick, and heat until simmering. Remove the cinnamon stick.
3 Make 5 diagonal cuts in the skin of each duck breast. Heat a griddle pan, until very hot. Cook the duck, skin side down, for 10 minutes, until crisp and brown, draining off any excess fat during cooking. Turn the duck breasts over and cook for another 5 minutes, or until cooked to your liking.
4 Slice and serve with the rhubarb sauce.
