Rhubarb and orange fool

Ingredients
  • 400g pack Asda British trimmed rhubarb, cut into 2cm long pieces
  • 100g caster sugar
  • Grated zest of 1 orange
  • 425ml semi-skimmed milk
  • 50g Asda custard powder
  • 3tbsp freshly squeezed orange juice
  • 250g tub Asda Italian mascarpone
  • sweet dessert biscuits and pared orange zest, to decorate

Method
1 Rinse the rhubarb under cold running water and put in a pan with half the sugar. Cover and cook over a low heat for about 10 minutes, until tender, stirring occasionally. Add the orange zest.

2 Mix 100ml of the milk with the custard powder and remaining sugar until smooth. Heat the remaining milk until almost simmering. Pour onto the custard mixture, whisking. Return to the pan and bring to the boil, stirring continuously. Pour the custard into a bowl and stir in the orange juice and cooked rhubarb. Cover with clingfilm and leave until cold.

3 Put the rhubarb custard and mascarpone in a blender or food processor and blend until smooth. Divide between 6 glasses and chill until needed. Serve topped with crumbled biscuits and a little pared orange zest.
