Fruit kebabs with mango coulis

Preparation time 20 minutes
Ingredients
  • 1 ripe mango, peeled, stoned and chopped
  • juice of 1 orange
  • 2 ripe, firm pears or apples
  • 2 firm bananas
  • juice of 1 lemon
  • 1tsp Asda honey
  • half a pineapple, peeled and cut into bite-sized pieces
  • 2 nectarines, stoned and thickly sliced
  • 8 physalis (cape gooseberries), to decorate

Method
1 Soak 8 wooden skewers in cold water to prevent them burning under the grill.

2 Place the chopped mango in a food processor or blender with half the orange juice and blend until smooth.

3 Core and thickly slice the pears or apples and the banana and place in the lemon juice to prevent them from going brown.

4 Stir the honey into the remaining orange juice. Thread the fruit onto the skewers and brush with the honey and orange juice mixture

5 Grill the kebabs for 3 to 4 minutes. Serve warm with the mango coulis and a couple of physalis to decorate.
