Red rice salad

Ingredients
  • 250g white, red and wild rice
  • 3tbsp Asda olive oil
  • 2tbsp lemon juice
  • 0.5tsp Asda Dijon mustard
  • 1tsp Asda clear honey
  • salt and freshly ground black pepper
  • 4 vine-ripened tomatoes
  • 8cm piece cucumber, diced
  • 1 yellow pepper, deseeded and diced
  • 1 bunch spring onions, trimmed and sliced
  • 10 pitted green olives, sliced
  • 2tbsp chopped Asda fresh flat-leaf parsley
  • 2tbsp chopped Asda fresh mint

Method
1 Empty the rice sachets into a pan and pour on 900ml boiling water. Cover and simmer for 35 to 40 minutes until just tender.

2 Drain in a sieve and rinse with cold running water. Drain thoroughly and put in a large bowl.

3 Put the oil, lemon juice, mustard, honey and seasoning in a separate bowl and whisk together. Add to the cooked rice and stir in gently, taking care not to damage the grains of rice.

4 Meanwhile, put the tomatoes in a bowl and pour on boiling water to cover. Leave for 30 seconds, then pour off the water. Skin the tomatoes, cut them into quarters, discarding the seeds and juice, and chop the flesh.

5 Add the tomatoes, cucumber, pepper, spring onions, olives, parsley and mint to the rice and toss together gently.
