Ingredients
- 250g Asda long grain white rice
- 125g Asda frozen petit pois
- 2 large eggs
- 1tbsp Asda sesame oil
- 2tbsp Asda sunflower oil
- 100g Asda roast pork loin, trimmed of fat and diced
- 1 bunch spring onions, trimmed and sliced
- 1 red pepper, deseeded and cut into small pieces
- 1tsp salt
- 125g Asda peeled cooked tiger prawns
- 2tbsp soy sauce
Method
1 Heat a large pan of water until boiling. Add the rice and bring back to the boil. Stir once with a fork then boil, uncovered, for 10 to 12 minutes, until tender. Drain and put in a shallow dish. Leave until completely cold.
2 Boil the peas for 1 minute. Drain.
3 Break the eggs into a bowl, add the sesame oil and beat with a fork until evenly mixed.
4 Heat the sunflower oil in a wok until really hot. Add the pork, spring onions and red pepper and stir-fry for 1 to 2 minutes. Add the rice and salt and stir-fry for another 3 to 4 minutes. Add the prawns and heat through.
5 Spread the rice mixture out in the wok and drizzle on the egg and oil mixture. Cook, stirring, for 1 minute or until the egg is set.
6 Serve sprinkled with soy sauce to taste.
