Poached oriental salmon
A whole poached salmon looks impressive, and tastes great cooked with oriental-style flavourings. You can get salmon from Asda’s fresh fish counter. The fish come in three sizes – small, medium and large – as a general guide, about 2.5kg is ideal for eight people. Place your order at the counter a few days ahead of your party to be sure of getting the size you want.

Ingredients
  • 1 lime, sliced
  • 1 Asda fresh salmon, gutted and head removed (staff at the fresh fish counter will do this for you)
  • 2 cloves garlic, thinnly sliced
  • 5cm piece of fresh root ginger, peeled and cut into fine sticks
  • 6 spring onions, shredded
  • 4 tbsp white wine vinegar
  • 195g jar Asda plum and ginger stir-fry sauce
  • 3 tbsp medium dry sherry
  • 1 tbsp sesame seeds, toasted
  • fresh lemon and lime wedges and fresh coriander, to garnish

Method
1 Put the lime slices inside the salmon and put it in a fish kettle or large roasting tin.

2 Scatter over the garlic, ginger, half the spring onions, the vinegar and enough water cover the fish.

3 Bring the fish slowly to the boil over a low heat, then cover and simmer very gently for 10 minutes. Remove from the heat and leave to cool in the cooking liquid for 3 hours.

4 Drain the fish, lift it out onto a work surface and carefully remove the skin. Discard the liquid and the lime slices, and reserve the garlic and ginger pieces.

5 Warm the sauce with the sherry and reserved garlic and ginger. Lay the salmon on a large platter, pour over the sauce, then cover and chill until ready to serve. Scatter over the sesame seeds and garnish with the remaining shredded spring onions, fresh lemon and lime wedges and fresh coriander.
