Leek and potato soup
Suitable for vegetarians
A winter warmer to see you through the afternoon
Serves 4
Ready in 35 minutes
Ingredients
  • 2 leeks, trimmed and sliced
  • 1 large potato, peeled and diced
  • 1 bay leaf
  • 800ml vegetable stock
  • 300ml semi-skimmed milk
  • 4tbsp Asda Good for you! crème fraîche
  • Few fresh Asda chives, chopped, to garnish

Method
1 Put the leeks, potato, bay leaf and stock in a pan. Cover, bring to the boil and simmer for 20 minutes. Add the milk and simmer for 5 minutes.

2 Discard the bay leaf. Purée the soup and pour into 4 bowls. Add a spoonful of crème fraîche to each and garnish.
