Risotto with peas
An easy-to-make version of the classic, Italian dish
Serves 4
Ready in 25 minutes
Ingredients
  • 1 onion, chopped
  • 250g pack Asda thick cut back bacon, diced
  • 350g Asda long grain rice
  • 250g Asda frozen petit pois
  • 2tsp Asda mixed dried herbs
  • 100g Parmigiano Reggiano, grated
Method
1 Heat 2 tablespoons of oil in a pan, add the onion and bacon and gently fry until the onion is soft and golden. Stir in the rice until all the grains are completely coated in the oil.

2 Add the peas, herbs and 850ml hot water, and season to taste. Heat until simmering, cover and continue to simmer for 12 minutes until all the water is absorbed. Stir in the Parmesan and serve immediately.
