Creamy mushroom stroganoff
Suitable for vegetarians
Serves 4
Preparation time 20 minutes
Ingredients
  • 15g butter
  • 2tbsp olive oil
  • 1 onion, sliced
  • 2 cloves garlic, finely chopped
  • 3 celery sticks, chopped
  • 1tsp paprika
  • 500g Asda chestnut mushrooms, sliced
  • 150g Asda baby button mushrooms
  • 150ml white wine or cider
  • 200g tub crème fraîche
  • 2tbsp chopped fresh parsley
  • 1tbsp chopped fresh chives
  • Salt and freshly ground black pepper

Method
1 Heat the butter and oil in a frying pan. Cook the onion, garlic and celery for 3 to 4 minutes, until soft. Stir in the paprika and cook for 1 minute.

2 Add the mushrooms and white wine or cider, bring to the boil, then reduce the heat and simmer for 4 to 5 minutes.

3 Stir in the crème fraîche and half the herbs, season to taste and heat through. Sprinkle with the remaining herbs and serve with tagliatelle.
