Flamenco eggs
This colourful, spicy dish makes a cracking midweek supper
Serves 4
Preparation time 15 minutes
Cooking time 10 minutes
Ingredients
  • 80g pack Asda chorizo
  • 1 red onion, chopped
  • 2 peppers (1 red, 1 yellow), deseeded and chopped
  • 400g can Asda thick cut chopped tomatoes with basil and garlic
  • 4 large eggs
  • plus salt and pepper

Method
1 Preheat the oven to 200C/Gas 6.

2 Cook the chorizo and onion in a nonstick pan. Add the peppers, cook for 2 to 3 minutes, then add the tomatoes. Season to taste and heat through.

3 Divide between 4 individual ovenproof dishes and make a hollow in the vegetables.

4 Break an egg into each hollow, then bake for 10 minutes until the egg whites are just set.
