This colourful, spicy dish makes a cracking midweek supper

Ingredients
- 80g pack Asda chorizo
- 1 red onion, chopped
- 2 peppers (1 red, 1 yellow), deseeded and chopped
- 400g can Asda thick cut chopped tomatoes with basil and garlic
- 4 large eggs
- plus salt and pepper
Method
1 Preheat the oven to 200C/Gas 6.
2 Cook the chorizo and onion in a nonstick pan. Add the peppers, cook for 2 to 3 minutes, then add the tomatoes. Season to taste and heat through.
3 Divide between 4 individual ovenproof dishes and make a hollow in the vegetables.
4 Break an egg into each hollow, then bake for 10 minutes until the egg whites are just set.
