Ingredients
- Few sprigs chopped fresh rosemary
- 1 clove garlic, crushed
- 2 small red onions, cut into pieces
- 2 courgettes, thickly sliced
- 2 peppers (1 red, 1 yellow), deseeded and cut into chunks
- Salt and pepper
- Olive oil
Method
1 Put 2 tablespoons of olive oil in a shallow dish with the rosemary, garlic and seasoning to taste. Add the vegetables, stir and leave for 15 minutes. Meanwhile, soak 12 bamboo skewers in water.
2 Preheat the grill. Thread the marinated vegetables in turn onto the skewers.
3 Grill for 10 minutes, turning frequently and brushing with the herb oil. Garnish with rosemary.
