One can of juicy fruit can make a deliciously tasty tropical dish

Ingredients
- 3tbsp lime juice
- 1tbsp sunflower oil
- 2-3 green chillies, deseeded and finely chopped
- Salt and freshly ground black pepper
- 432g can pineapple rings in natural juice, drained
- 1 large red pepper, deseeded and diced
- 1 small red onion, chopped
- 200g can sweetcorn niblets, drained
Method
1 Put the lime juice, oil, chillies and seasoning in a jar with a tight-fitting lid and shake well. Leave for at least 20 minutes for the flavours to infuse.
2 Meanwhile, cut the drained pineapple rings into 1cm pieces. Mix the pineapple with the red pepper, red onion and sweetcorn.
3 Shake the dressing again, pour over the pineapple salsa and stir in thoroughly. This salsa is delicious with chicken, pork or tuna steaks.
