Ingredients
  • 50g unsalted butter
  • 50g dark soft brown sugar
  • 4 cardamom pods, lightly crushed
  • 432g can pineapple rings in natural juice, drained,
  • 4 tablespoons of juice
  • 4tbsp dark rum

Method
1 Heat the butter, sugar and cardamom in a frying pan over a low heat, until the butter melts and the sugar dissolves, stirring occasionally. Add the reserved pineapple juice and simmer for 2 to 3 minutes, stirring constantly.

2 Add the pineapple rings and simmer for 1 minute to heat through.

3 Pour the rum into the pan at the side, heat for a few seconds, then remove from the heat and ignite with a match. Serve as soon as the flames die down.
