Ingredients
- 25g butter
- 1tbsp olive oil
- 4 chicken breasts, with skin on
- 300g Asda frozen sliced mixed peppers, thawed
- Pinch dried chilli flakes
- 200ml Asda dry sherry
- 2tbsp balsamic vinegar
- 16 black pitted olives
Method
1 Preheat the oven to 190C/Gas 5. Heat the butter and oil in a roasting tin and cook the chicken, skin side down, for 6 to 8 minutes, then turn over.
2 Scatter the peppers and chilli around the chicken, add the sherry, balsamic vinegar and olives, then cook for 25 minutes.
