Ingredients
- 175g plain flour
- 1tsp baking powder
- 75g butter, chilled and diced
- 75g soft brown sugar
- 1⁄2tsp vanilla essence
- 1 large egg
- 8 heaped tsp Asda Extra Special Strawberry Jam
Method
1 Preheat the oven to 220C/200C Fan/Gas 7. Line a baking tray with baking parchment. Sift the flour and baking powder into a mixing bowl. Rub in the butter until the mixture resembles coarse breadcrumbs. Stir in the sugar.
2 Beat the vanilla essence and egg together and stir into the flour mixture to form a stiff dough. Spoon the dough onto the baking tray to make eight rough mounds.
3 Press your thumb into the middle of each mound to make a dip, and then spoon a teaspoon of the jam into each.
4 Bake in the oven for 12 to 15 minutes. Leave to cool on a wire rack and serve.
