Mussel magic
Steaming the mussels with cider makes a refreshing dish. Leave room in the foil parcels for the mussels to open and catch all the lovely juices.
Serves 4

Ingredients
  • 500g fresh live Asda mussels
  • 1 onion, chopped
  • 2 cloves garlic, finely chopped
  • 4 rashers streaky smoked bacon, roughly chopped
  • 275ml can Asda dry cider

Method
1 Clean and de-beard the mussels under cold running water (this means pulling all of the “hairy” tufty bits off). Chuckout any mussels that have got broken shells, or that are not tightly closed.

2 Divide the mussels between 4 double pieces of foil, each measuring about 25cm x 25cm. Sprinkle the mussels with the chopped onion, garlic and bacon, then scrunch up the edges of the foil squares, and carefully pour over the cider. Loosely fold up the edges of the foil to make 4 parcels full of the mixture.

3 Cook the parcels for 10 to 12 minutes using the direct method, until the mussels have opened. Discard any that haven’t opened, then serve immediately.
