This is lovely served with toasted bagels and sour cream or coleslaw. For a Jamaican version, use rum instead of vodka

Ingredients
- 40g sea salt
- 50g dark soft brown sugar
- Freshly ground black pepper
- 4 Asda salmon fillets, with skin on
- 100ml vodka
Method
1 Mix the salt, sugar and pepper and spread over salmon. Put the fish in a bowl, add the vodka and leave to marinate for about 4 hours, turning occasionally.
2 Remove the salmon from the vodka marinade and cook for 25 to 30 minutes using the indirect method, until the fish just turns opaque and is moist in the middle.
