Ingredients
- 1tbsp olive oil
- 1 onion, sliced
- 100g Asda chorizo, diced
- ½ x 907g bag Asda frozen sliced mixed peppers, thawed
- 15g pack fresh Asda flat-leaf parsley, chopped
- 4 eggs
Method
1 Preheat the oven to 190C/Gas 5. Heat the oil in a pan and cook the onion for 3 to 4 minutes, until soft. Add the chorizo and cook for 2 minutes, then stir in the peppers and parsley and cook for 3 minutes more. Put in an ovenproof dish.
2 Bake for 5 minutes, then carefully make 4 wells and crack an egg into each. Bake until the eggs are set.
