Suitable for vegetarians
This sauce is fabulous with gnocchi, or firm white fish, such as cod or haddock, as well as pasta.

Ingredients
- 4 shallots, chopped
- 1tbsp oil
- 1 clove garlic, crushed
- 4tbsp sundried tomato purée
- 400g can thick cut chopped tomatoes
- 100g pitted black olives, halved
- 200g pack Asda soft cheese
- Handful fresh basil leaves
Method
1 Soften the shallots in the oil in a frying pan over a gentle heat for 5 minutes. Stir in garlic and tomato purée and cook for a few more minutes.
2 Stir in the chopped tomatoes and olives and bring to the boil. Reduce the heat. Stir in the soft cheese until it melts.
3 Toss in a handful of freshly torn basil leaves and serve with pasta.
