Cocktail buns
Choux pastry is ideal for savoury recipes, such as these tasty cheesy buns with a bit of a spicy kick

Ingredients
  • 1 quantity choux pastry
  • 0.25tsp mustard powder
  • Good pinch cayenne pepper
  • 25g Parmesan, grated
  • Filling suggestions:
  • Guacamole
  • Houmous
  • Soft cheese mixed with smoked salmon, lemon juice and snipped chives
  • Smoked mackerel pâté

Method
1 Preheat the oven to 220C/Gas 7. Line 3 baking trays with baking parchment.

2 Prepare pastry as in the basic recipe, adding the mustard powder and cayenne pepper to the sifted flour, and the Parmesan after the eggs. Put 36 heaped teaspoons on the trays, leaving a gap between each.

3 Bake for 20 to 25 minutes, until well risen and golden. Remove from the oven, pierce the side of each bun to let out any steam, then return to the oven for 5 minutes. Cool.

4 Cut the buns in half and fill with your favourite fillings, then replace the top halves.
