Ingredients
- 250g frozen puff pastry, thawed
- ½ x 907g bag Asda frozen sliced mixed peppers, thawed
- 2 ripe tomatoes, sliced
- 125g Asda Extra Special Gorgonzola
- 1tbsp olive oil
- Few fresh basil leaves (optional)
Method
1 Preheat oven to 200C/Gas 6. Roll out the pastry to a 30cm x 20cm rectangle and, with a knife, mark a 2cm border around the edge, without cutting through. Transfer to an oiled baking sheet. Put the peppers on kitchen paper to absorb any excess moisture, then distribute them evenly over the pastry. Arrange the tomatoes on top, then crumble over the cheese.
2 Drizzle over the oil and bake for 25 minutes. Garnish with fresh basil leaves before serving.
