Seared beef, rocket & tomato salad
This delicious combo is a big favourite in Italy
Serves 8
 Preparation time 15 minutes
 Cooking time 20 minutes
Ingredients
  • 900g piece Asda mid-beef fillet
  • 1 tbsp olive oil
  • 300g pack Asda Extra Special cherry on the vine tomatoes, halved
  • 40g bag Asda rocket
  • Asda Extra Special Cheddar, Parmesan and pink peppercorn dressing
  • Parmesan shavings, to garnish

Method
1 Preheat oven to 230C/Gas 8. Season the beef all over. Heat the oil in a frying pan, add the beef to brown, then roast in the oven for 200 minutes.

2 Leave to rest for 10 minutes before slicing thinly. Serve on a large platter scattered with tomatoes, rocket, dressing and Parmesan shavings.
