Ingredients
- 4 oranges
- 2 bulbs fennel, sliced, and leaves, to garnish
- Half a red onion, sliced
- 2tsp fennel seeds
- 4 tbsp olive oil
- 4 tbsp red wine vinegar
Method
1 Cut the top and bottom off each orange so they sit flat. Remove the peel and pith, and slice thinly.
2 Mix the orange, onion, fennel and seeds in a bowl. Sprinkle with salt and fennel leaves, drizzle over the oil and vinegar, and toss. Serve immediately.
