Ingredients
  • 125g golden caster sugar
  • 1 vanilla pod, scored
  • 1 each cantaloupe and galia melons, cut into chunks
  • 1 mango, peeled and sliced
  • 1 pineapple, cut into chunks
  • 2 kiwi fruit, peeled and sliced
  • 2 passion fruit, halved and flesh scooped out
  • 250g tub mascarpone
  • 142ml tub double cream
  • 50g icing sugar

Method
1 Put the sugar and 600ml water in a pan. Add the vanilla pod, bring to the boil and simmer until the sugar has dissolved. Leave to cool.

2 Put the fruit in a glass bowl and mix together.

3 Whip the mascarpone and cream, stir in the sugar. Add the syrup to the fruit and serve chilled with the cream.
