Middle Eastern carrot salad
Suitable for vegetarians
Warm spices pack an exotic punch in this crisp salad
Serves 4

Ingredients
  • 700g carrots, peeled and sliced
  • 3 tbsp olive oil
  • 2 cloves garlic, finely chopped
  • 1 red chilli, deseeded and finely chopped
  • 1 tsp paprika
  • Pinch ground turmeric
  • Grated zest and juice of one lemon
  • 2 tbsp chopped fresh parsley
  • 1 tbsp sesame seeds, toasted

Method
1 Boil the carrots for 5 to 10 minutes, until tender. Drain.

2 Heat the oil in a pan and cook the garlic and chilli for 1 to 2 minutes, until softened. Stir in the paprika and turmeric, lemon zest and juice and a splash of water.

3 Stir in carrots and parsley. Cool. Cover and chill for 2 hours. Stir in the sesame seeds before serving.
