Mixed herb butters
Suitable for vegetarians

Ingredients
  • 250g butter, softened
  • 8 large fresh basil leaves, chopped
  • 4 sun-dried tomatoes, drained and chopped
  • 2 tbsp chopped fresh coriander
  • half a red chilli, deseeded and finely chopped
  • 1 tbsp lime juice
  • 1 tsp Asda hot horseradish sauce
  • 2 tbsp chopped fresh parsley

Method
1 Divide the butter between three small bowls and mash with a fork.

2 Add the basil and tomatoes to one, coriander, chilli and lime juice to another and horseradish and parsley to the last one. Season and beat until mixed well.

3 Tear off three pieces of foil measuring about 20cm square. Roll each piece of butter into a sausage shape about 12 cm long, wrap in the foil and twist the ends closed to seal the foil parcels. Chill until hard. Slice off pats to serve on grilled meat, fish or vegetables. The butters can be stored wrapped in the foil in the freezer - just cut off slices whenever needed.
